Mexican Casserole

Ingredients:
1 lb. ground beef
1 (15 oz.) jar salsa
1 (1.25 oz.) packet taco seasoning
20 corn tortillas
1 (20 oz.) can refried beans
4 cups grated Mexican blend cheese
16 oz. sour cream
Instructions:
Preheat oven to 375 degrees.
Cook beef in skillet on medium heat until browned and fully cooked through, adding taco seasoning and stirring when beef is almost done.
Remove from heat, stir in salsa and set aside. Coat a 9×13 inch baking dish with cooking spray. Layer 10 corn tortillas on bottom.
In a medium size mixing bowl, combine refried beans and sour cream.
Beat at medium speed with electric mixer until well blended. Spoon half of bean mixture on top of tortillas, spread into even layer.
Spread half of beef and salsa mixture on top into even layer, then sprinkle 2 cups of cheese on top of beef. Repeat layering. Bake for 30 minutes, serve warm.
Pro-Tip:
if getting your family to eat the contents of chunky salsa is an issue, just pour the salsa in a blender and puree until smooth. No chunks! You can also choose how hot or mild your dish is by how hot or mild the salsa is! Picante style salsa also has a smoother consistency.
